Actually the seed of a plant, quinoa ranges in color from white to red to black. For more than 4,000 years, it has been cultivated; the ancient Incas considered it an important sacred crop, referring to it as “the mother grain.” Quinoa's slightly crunchy texture and nutty flavor adds a certain robustness to each dish, and it's versatility means it can be used in a variety of meals.
